Ingredients

  • 1 cup cherry tomatoes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • A pinch of red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the cherry tomatoes. In a mixing bowl, drizzle 1 tablespoon of olive oil and balsamic vinegar over them, add minced garlic, salt, and black pepper, and toss gently.
  3. Spread the cherry tomatoes on a baking sheet in a single layer and roast for about 15-20 minutes until blistered.
  4. While the tomatoes roast, combine the remaining olive oil with chopped basil, parsley, chives, lemon zest, and red pepper flakes in a bowl to make herb-infused oil.
  5. On a serving plate, gently place the burrata balls and create small openings for the herb-infused oil.
  6. Arrange the roasted tomatoes around the burrata and drizzle any juices left from the baking sheet.
  7. Garnish with fresh basil leaves and serve immediately with crusty bread or crackers.
