Ingredients

  • 1 cup brewed espresso or strong coffee, cooled
  • 1/2 cup coffee liqueur (such as Kahlúa)
  • 1 1/2 cups chocolate wafer cookies, crushed into fine crumbs
  • 1/2 cup cocoa powder for dusting
  • 1/4 cup chocolate shavings or grated chocolate for garnish (optional)

Instructions

  1. In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat on medium speed for 2-3 minutes until smooth and creamy.
  2. In a separate shallow dish, mix the cooled espresso with coffee liqueur.
  3. Add the crushed chocolate wafer cookies to the mascarpone mixture and stir gently until combined.
  4. Scoop out portions and roll into balls with your hands.
  5. Place rolled truffles on a parchment-lined baking sheet.
