Instructions
- In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat on medium speed for 2-3 minutes until smooth and creamy.
- In a separate shallow dish, mix the cooled espresso with coffee liqueur.
- Add the crushed chocolate wafer cookies to the mascarpone mixture and stir gently until combined.
- Scoop out portions and roll into balls with your hands.
- Place rolled truffles on a parchment-lined baking sheet.
- Dip each ball briefly into the coffee mixture.
- Roll each truffle in cocoa powder until fully coated.
