Description

A delightful sandwich featuring crispy fried chicken tossed in spicy buffalo sauce, paired with creamy blue cheese sauce, all nestled in buttery brioche buns.


Ingredients

  • 2 small boneless, skinless chicken breasts, halved and pounded to 1/4” thickness
  • 2 cups buttermilk (or 2 cups milk plus 2 tbsp white vinegar, let sit for 5 min)
  • 1/4 cup hot sauce (Frank’s Red Hot recommended)
  • 4 tbsp melted butter plus extra for toasting buns
  • 2 cups all-purpose flour
  • 1/2 cup potato starch (or substitute with cornstarch)
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 2 tsp sea salt or kosher salt
  • 1 tsp freshly ground black pepper
  • 1/2 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup sour cream (or 1 tbsp Greek yogurt or Labneh)
  • 3 tbsp blue cheese crumbles
  • 3 cloves minced garlic
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh squeezed lemon juice
  • 1 tsp dried chives
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp sea salt or kosher salt
  • 4 brioche burger buns
  • Spring mix or lettuce for crunch

Instructions

  1. Marinate the chicken by placing it in a resealable bag filled with buttermilk. Let it rest in the refrigerator for at least 4 hours or overnight.
  2. Prepare the breading by whisking together all the breading ingredients in a large bowl.
  3. Take the marinated chicken and dredge each piece in the breading mix, resting them for 15 minutes.
  4. Heat oil in a skillet and fry the chicken for 3-4 minutes on each side until crispy and golden brown.
  5. Mix all the sauce ingredients in a bowl until combined and creamy.
  6. Toast the brioche buns in a pan with butter and assemble the sandwich with spring mix, fried chicken, and blue cheese sauce.

Notes

For a crispier chicken, consider refrigerating the breaded chicken for up to 2 hours before frying.
