Ingredients

  • 2 tablespoons olive oil
  • 4 cups fresh spinach
  • 4 ounces feta cheese, crumbled
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a rolling boil, and cook gnocchi according to package instructions until they float. Transfer to a colander to drain.
  2. In a large frying pan, heat olive oil over medium-high heat. Add the drained gnocchi and cook undisturbed for 2-3 minutes until golden brown.
  3. Carefully flip the gnocchi with a spatula and cook for another 2-3 minutes until crispy on the other side.
  4. Reduce heat to medium, add minced garlic, and sauté for about a minute until fragrant.
  5. Toss in fresh spinach, stirring continuously until wilted, about 2-3 minutes.
  6. Season with salt, black pepper, and red pepper flakes. Stir to combine.
  7. Off the heat, gently fold in crumbled feta cheese until slightly melted.
  8. Serve immediately, plating with a generous helping of spinach and feta on top.

Notes

For the crispiest gnocchi, avoid overcrowding the pan and let them cook undisturbed for a few minutes.
