- 1 pound gnocchi
- 2 tablespoons olive oil
- 4 cups fresh spinach
- 4 ounces feta cheese, crumbled
- 2 cloves garlic, minced
- Salt (to taste)
- Black pepper (to taste)
- 1 teaspoon red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a rolling boil, and cook gnocchi according to package instructions until they float. Transfer to a colander to drain.
- In a large frying pan, heat olive oil over medium-high heat. Add the drained gnocchi and cook undisturbed for 2-3 minutes until golden brown.
- Carefully flip the gnocchi with a spatula and cook for another 2-3 minutes until crispy on the other side.
- Reduce heat to medium, add minced garlic, and sauté for about a minute until fragrant.
- Toss in fresh spinach, stirring continuously until wilted, about 2-3 minutes.
- Season with salt, black pepper, and red pepper flakes. Stir to combine.
- Off the heat, gently fold in crumbled feta cheese until slightly melted.
- Serve immediately, plating with a generous helping of spinach and feta on top.
Notes
For the crispiest gnocchi, avoid overcrowding the pan and let them cook undisturbed for a few minutes.
