Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup pasta (such as ditalini or small shells)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the diced tomatoes, chicken broth, minced garlic, Italian seasoning, salt, and pepper.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Shred the chicken in the crockpot and stir in the heavy cream and pasta.
  5. Cook for an additional 30 minutes on high, until pasta is tender.
  6. Stir in Parmesan cheese and serve with fresh basil on top.

Notes
