A delightful twist on classic mashed potatoes, infused with rich, sweet caramelized onions for a comforting side dish.

- 2 lbs Yukon Gold or Russet potatoes
- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced
- 4 tablespoons butter
- 1/2 cup heavy cream (warmed)
- 1 1/2 teaspoons salt (divided)
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh chives (optional)
Instructions
- Begin by peeling and chopping the potatoes into even chunks.
- Place the chopped potatoes in a pot, covering them with cold water. Add 1 teaspoon of salt.
- Bring the water to a boil, then reduce to a simmer, allowing the potatoes to cook until fork-tender, about 15–20 minutes.
- While the potatoes are cooking, heat the olive oil in a pan over medium-low heat.
- Add the onions along with a pinch of salt. Cook the onions gently for 25–30 minutes until caramelized and golden brown.
- Once the potatoes are fork-tender, drain them and return them to the pot.
- Mash the potatoes until smooth and creamy.
- Stir in the butter and warmed heavy cream.
- Season with the remaining salt and black pepper according to taste.
- Fold in most of the caramelized onions, reserving some for topping.
- Transfer the mash to a serving bowl, top with reserved onions, and garnish with chives if desired. Serve warm.
Notes
For added flavor, try using a mix of potatoes or adding roasted garlic.
