Description

A delightful and easy-to-make spinach casserole with feta and cottage cheese, perfect for family gatherings or cozy weeknight dinners.


Ingredients

  • 10 oz frozen chopped spinach, thawed and drained
  • 1 cup crumbled feta cheese
  • 1 cup cottage cheese
  • 4 large eggs
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter

Instructions

  1. Thaw the spinach completely and squeeze out the excess moisture.
  2. In a skillet, heat olive oil or butter over medium heat, add onion, and sauté for about 5 minutes until translucent. Add garlic and cook for an additional minute.
  3. In a bowl, combine spinach, sautéed onion and garlic, feta, cottage cheese, beaten eggs, salt, and pepper. Mix well.
  4. Lightly grease a baking dish and pour the spinach mixture into it, smoothing the top.
  5. Preheat oven to 375°F (190°C) and bake for 35-40 minutes until firm and golden.
  6. Allow to rest for 10 minutes before serving.

Notes

For enhanced flavor, consider adding a pinch of nutmeg. You can use fresh spinach instead of frozen if preferred.
