- 10 oz frozen chopped spinach, thawed and drained
- 1 cup crumbled feta cheese
- 1 cup cottage cheese
- 4 large eggs
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil or butter
Instructions
- Thaw the spinach completely and squeeze out the excess moisture.
- In a skillet, heat olive oil or butter over medium heat, add onion, and sauté for about 5 minutes until translucent. Add garlic and cook for an additional minute.
- In a bowl, combine spinach, sautéed onion and garlic, feta, cottage cheese, beaten eggs, salt, and pepper. Mix well.
- Lightly grease a baking dish and pour the spinach mixture into it, smoothing the top.
- Preheat oven to 375°F (190°C) and bake for 35-40 minutes until firm and golden.
- Allow to rest for 10 minutes before serving.
Notes
For enhanced flavor, consider adding a pinch of nutmeg. You can use fresh spinach instead of frozen if preferred.
