Ingredients

  • 3 tablespoons olive oil

  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • 4 skewers

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  2. Add the cubed chicken pieces to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
  3. Thread the marinated chicken onto skewers, leaving space between pieces. Preheat your grill to medium-high heat.
  4. Grill the skewers, turning every few minutes, until the chicken is cooked through and has grill marks (about 10-12 minutes).
  5. In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, and salt to make the tzatziki sauce.
  6. Serve the grilled chicken skewers with a dollop of tzatziki sauce.
