- 1 lb chicken breast, cubed
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 cucumber, grated
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- Salt to taste
- 4 skewers
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Add the cubed chicken pieces to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
- Thread the marinated chicken onto skewers, leaving space between pieces. Preheat your grill to medium-high heat.
- Grill the skewers, turning every few minutes, until the chicken is cooked through and has grill marks (about 10-12 minutes).
- In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, and salt to make the tzatziki sauce.
- Serve the grilled chicken skewers with a dollop of tzatziki sauce.
