- 8 cups chicken broth
- 3/4 cup rice (or orzo)
- 3 large eggs
- 1/2 cup fresh lemon juice

Instructions
- In a large pot, immerse the chicken in 8 cups of chicken broth and simmer gently for about 20 to 25 minutes until fully cooked. Remove the chicken, shred into bite-sized pieces, and set aside.
- In the same pot, add the rice (or orzo) and let it cook in the broth for about 15 minutes.
- Whisk the eggs and fresh lemon juice together in a separate bowl until smooth and frothy.
- Slowly add a ladle of hot broth into the egg mixture while whisking continuously to temper the eggs.
- Stir the tempered mixture back into the soup pot along with the shredded chicken. Heat gently over low heat for about 3 to 4 minutes.
- Season to taste with salt and pepper, garnish with fresh parsley or dill, and serve hot.
