Ingredients

  • 1 lb chicken breasts or thighs
  • 8 cups chicken broth
  • 3/4 cup rice (or orzo)
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  1. In a large pot, immerse the chicken in 8 cups of chicken broth and simmer gently for about 20 to 25 minutes until fully cooked. Remove the chicken, shred into bite-sized pieces, and set aside.
  2. In the same pot, add the rice (or orzo) and let it cook in the broth for about 15 minutes.
  3. Whisk the eggs and fresh lemon juice together in a separate bowl until smooth and frothy.
  4. Slowly add a ladle of hot broth into the egg mixture while whisking continuously to temper the eggs.
  5. Stir the tempered mixture back into the soup pot along with the shredded chicken. Heat gently over low heat for about 3 to 4 minutes.
