Ingredients

  • 1 lb ground beef
  • 1 small onion, finely grated
  • 1/4 cup arborio rice, uncooked
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 egg
  • Salt and black pepper to taste
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 eggs (for the sauce)
  • Juice of 2 lemons (about 1/4 cup)
  • Salt and pepper to taste (for the sauce)

Instructions

  1. Prepare the Mixture: In a large mixing bowl, combine the ground beef, grated onion, uncooked arborio rice, chopped parsley, dill, and egg. Add salt, pepper, and oregano. Mix gently.
  2. Shape and Chill: Scoop portions of the mixture and shape into golf ball-sized meatballs. Chill in the fridge for 15–20 minutes.
  3. Create the Broth: In a pot, simmer the chicken broth and olive oil over low heat until warm.
  4. Cook the Meatballs: Add the chilled meatballs to the pot, cover, and simmer for 30 minutes.
  5. Whisk the Sauce: In a bowl, whisk eggs and lemon juice, then temper with hot broth while whisking.
  6. Combine and Thicken: Stir the egg-lemon mixture back into the pot; stir over very low heat until the sauce thickens.
  7. Serve and Enjoy: Ladle the meatballs onto warm plates and garnish with dill or lemon wedges.

Notes

Use fresh herbs for best flavor. Don’t overcrowd the meatballs during cooking.
