Description

Delicious grilled chicken skewers marinated in coconut milk and aromatic Thai spices, perfect for gatherings and family dinners.


Ingredients

  • 2 lbs chicken thighs or breasts, cut into 1-inch cubes
  • 1 cup full-fat coconut milk
  • 2 tbsp soy sauce (or tamari)
  • 1 tbsp lime juice + zest
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 stalk lemongrass, finely chopped (or 1 tbsp paste)
  • 2 tsp brown sugar (or honey)
  • Chili flakes or Thai chili (optional)

Instructions

  1. Mix the Marinade: In a mixing bowl, combine the coconut milk, soy sauce, lime juice and zest, minced garlic, grated ginger, finely chopped lemongrass, and brown sugar. Stir until well blended.
  2. Marinate the Chicken: Add the cubed chicken pieces to the marinade and coat thoroughly. Marinate for at least 1 hour, preferably overnight.
  3. Prepare the Skewers: Soak wooden skewers in water for about 30 minutes to prevent burning. Thread the marinated chicken onto the soaked skewers.
  4. Grill the Skewers: Preheat the grill to medium-high (around 400°F). Grill skewers for 4–5 minutes on each side until golden and cooked through.
  5. Serve and Enjoy: Remove from the grill and serve hot, garnished with fresh cilantro and lime wedges.

Notes

Use fresh ingredients for enhanced flavor. Customize the heat by adding chili flakes according to taste.
