- 1 box Strawberry Cake Mix
- 1 cup Guava Nectar or Guava Juice
- 3 large Eggs
- 1/2 cup Coconut Oil
- 8 oz Cream Cheese
- 1/2 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 8 oz Cool Whip
- 2 1/2 cups Guava Nectar or Guava Juice (for topping)
- 1/2 cup Granulated Sugar (for topping)
- 2 tbsp Cornstarch
- 1/4 cup Water
- 1 cup Sweetened Coconut Flakes (optional)
Instructions
- Preheat your oven to 350°F and prepare a 13 x 9-inch baking dish with a light spray of vegetable oil.
- In a mixing bowl, combine the Strawberry Cake Mix, guava juice, eggs, and coconut oil, mixing on low for 30 seconds, then on high for 2 minutes until smooth.
- Pour the batter into the prepared pan and bake for 24–26 minutes, checking for doneness with a toothpick.
- Allow the cake to cool for a few minutes before transferring it to a wire rack to cool completely.
- In a separate bowl, beat the cream cheese until fluffy, then gradually mix in the sugar and vanilla, followed by folding in the Cool Whip.
- Spread the cream cheese mixture over the cooled cake.
- In a saucepan, combine the guava juice and sugar, bring to a boil, and whisk in the cornstarch and water until thickened.
- Cool the guava gel in the fridge until set, then spread it over the cream cheese layer and refrigerate until fully set.
- If desired, sprinkle with sweetened coconut flakes before serving.
- Slice the cake and enjoy every luscious bite.
