Ingredients

  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Guava Juice
  • 3 large Eggs
  • 1/2 cup Coconut Oil
  • 8 oz Cream Cheese
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Cool Whip
  • 2 1/2 cups Guava Nectar or Guava Juice (for topping)
  • 1/2 cup Granulated Sugar (for topping)
  • 2 tbsp Cornstarch
  • 1/4 cup Water
  • 1 cup Sweetened Coconut Flakes (optional)

Instructions

  1. Preheat your oven to 350°F and prepare a 13 x 9-inch baking dish with a light spray of vegetable oil.
  2. In a mixing bowl, combine the Strawberry Cake Mix, guava juice, eggs, and coconut oil, mixing on low for 30 seconds, then on high for 2 minutes until smooth.
  3. Pour the batter into the prepared pan and bake for 24–26 minutes, checking for doneness with a toothpick.
  4. Allow the cake to cool for a few minutes before transferring it to a wire rack to cool completely.
  5. In a separate bowl, beat the cream cheese until fluffy, then gradually mix in the sugar and vanilla, followed by folding in the Cool Whip.
  6. Spread the cream cheese mixture over the cooled cake.
  7. In a saucepan, combine the guava juice and sugar, bring to a boil, and whisk in the cornstarch and water until thickened.
  8. Cool the guava gel in the fridge until set, then spread it over the cream cheese layer and refrigerate until fully set.
  9. If desired, sprinkle with sweetened coconut flakes before serving.
  10. Slice the cake and enjoy every luscious bite.
