- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- 1 garlic clove, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Pinch of paprika
- Toothpicks for securing
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts thin for even cooking.
- In a mixing bowl, combine ricotta cheese, grated Parmesan, parsley, thyme, garlic, and seasoning. Mix until smooth.
- Spread the filling evenly over the chicken breasts, roll them tightly, and secure with toothpicks.
- Place the rolls seam side down in a greased baking dish, brush with olive oil, and sprinkle paprika over the top.
- Bake for 25–30 minutes or until the internal temperature reaches 165°F (74°C).
- Let the rolls rest for five minutes before slicing.
