Ingredients

  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Pinch of paprika
  • Toothpicks for securing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts thin for even cooking.
  3. In a mixing bowl, combine ricotta cheese, grated Parmesan, parsley, thyme, garlic, and seasoning. Mix until smooth.
  4. Spread the filling evenly over the chicken breasts, roll them tightly, and secure with toothpicks.
  5. Place the rolls seam side down in a greased baking dish, brush with olive oil, and sprinkle paprika over the top.
  6. Bake for 25–30 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let the rolls rest for five minutes before slicing.
