Ingredients

Scale
  • 2 lbs chicken breasts
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • Taco shells or tortillas
  • Toppings (lettuce, cheese, salsa, avocado, etc.)

Instructions

  1. Place the chicken breasts in the Instant Pot and pour the chicken broth over them. Add the taco seasoning, ensuring each piece is generously coated.
  2. Seal the Instant Pot lid and cook on high pressure for 15 minutes.
  3. Allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
  4. Shred the chicken using two forks and stir in the black beans and corn.
  5. Serve the mixture in taco shells or tortillas and add your favorite toppings.

Notes

Consider using homemade taco seasoning for enhanced flavor. Add jalapeños or fresh cilantro for a kick.
