Description

A simple and fast homemade artisan bread recipe with a golden crust and soft, airy interior, perfect for all occasions.


Ingredients

Scale
  • 3 and 1/4 cups bread flour (plus more for your hands and pan)
  • 2 teaspoons instant yeast
  • 2 teaspoons coarse salt
  • 1 and 1/2 cups water (close to room temperature)
  • Optional cornmeal for dusting the pan

Instructions

  1. In a large ungreased mixing bowl, whisk together the flour, yeast, and salt.
  2. Pour in the water and gently mix until all the flour is moistened; shape the dough into a ball.
  3. Cover the bowl tightly with plastic wrap and let it rise for 2-3 hours until doubled in size.
  4. For enhanced flavor, refrigerate the dough for at least 12 hours up to 3 days.
  5. Lightly dust a baking sheet with flour and/or cornmeal, then turn the dough out onto a floured surface and cut in half, shaping into two loaves.
  6. Loosely cover and let rest for 45 minutes.
  7. Preheat your oven to 475°F.
  8. Score the loaves with three slashes about 1/2 inch deep.
  9. For a crispier crust, place a shallow metal pan on the bottom rack and pour boiling water into it.
  10. Bake for 20-25 minutes or until golden brown and hollow-sounding when tapped.
  11. Remove from oven and let cool for at least 20 minutes before slicing.

Notes

Store any leftovers loosely covered at room temperature for up to 5 days or in the refrigerator for up to a week.
