A simple and fast homemade artisan bread recipe with a golden crust and soft, airy interior, perfect for all occasions.

- 3 and 1/4 cups bread flour (plus more for your hands and pan)
- 2 teaspoons instant yeast
- 2 teaspoons coarse salt
- 1 and 1/2 cups water (close to room temperature)
- Optional cornmeal for dusting the pan
Instructions
- In a large ungreased mixing bowl, whisk together the flour, yeast, and salt.
- Pour in the water and gently mix until all the flour is moistened; shape the dough into a ball.
- Cover the bowl tightly with plastic wrap and let it rise for 2-3 hours until doubled in size.
- For enhanced flavor, refrigerate the dough for at least 12 hours up to 3 days.
- Lightly dust a baking sheet with flour and/or cornmeal, then turn the dough out onto a floured surface and cut in half, shaping into two loaves.
- Loosely cover and let rest for 45 minutes.
- Preheat your oven to 475°F.
- Score the loaves with three slashes about 1/2 inch deep.
- For a crispier crust, place a shallow metal pan on the bottom rack and pour boiling water into it.
- Bake for 20-25 minutes or until golden brown and hollow-sounding when tapped.
- Remove from oven and let cool for at least 20 minutes before slicing.
Notes
Store any leftovers loosely covered at room temperature for up to 5 days or in the refrigerator for up to a week.
