Description

Delightful soft pretzels coated in a buttery cinnamon-sugar mixture, perfect for any occasion.


Ingredients

  • 4 ¾ cups all-purpose flour
  • 1 tablespoon kosher salt
  • 2 tablespoons light brown sugar
  • 2 ¼ teaspoons yeast
  • ½ cup lukewarm water
  • 2 tablespoons unsalted butter, room temperature
  • 1 cup whole milk, lukewarm
  • 1 egg yolk
  • 2 tablespoons baking soda
  • 1 cup granulated sugar
  • 3 tablespoons ground cinnamon
  • 6 tablespoons unsalted butter, melted
  • ½ cup cream cheese, room temperature
  • 2 tablespoons unsalted butter, room temperature (for cream cheese dip)
  • 1 cup confectioners’ sugar
  • 1 tablespoon heavy cream
  • ½ teaspoon vanilla bean paste

Instructions

  1. In a medium bowl, combine the lukewarm milk, 1 tablespoon of sugar, and yeast. Allow this mixture to sit for 10-15 minutes until foamy.
  2. In the bowl of a stand mixer, mix the flour, remaining sugar, kosher salt, and butter. Pour in the foamy milk mixture along with the lukewarm water. Mix until combined.
  3. Knead the dough on low speed until soft and slightly sticky, approximately 5 minutes, then shape into a ball.
  4. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm area for about 1 hour or until doubled in size.
  5. Once risen, divide the dough into 12 portions. Roll each into a 20-inch rope and twist into a pretzel shape. Allow to rise for another 20-30 minutes.
  6. Preheat your oven to 375°F (190°C) and line baking trays with parchment paper.
  7. Bring water to a boil in a large pot, add baking soda. Boil each pretzel for 40 seconds on each side, then transfer to trays.
  8. Whisk the egg yolk with 1 tablespoon of water and brush over the pretzels.
  9. Bake for 12-14 minutes until golden brown, then cool for 5 minutes.
  10. Mix granulated sugar and cinnamon in a bowl. Brush warm pretzels with melted butter and coat with cinnamon sugar.
  11. To make the cream cheese dip, whip cream cheese and room temperature butter until smooth. Gradually add confectioners’ sugar, heavy cream, and vanilla bean paste.

Notes

Letting the dough rise in a warm environment helps it rise perfectly. Experiment with toppings for variety.
