- 4 ¾ cups all-purpose flour
- 1 tablespoon kosher salt
- 2 tablespoons light brown sugar
- 2 ¼ teaspoons yeast
- ½ cup lukewarm water
- 2 tablespoons unsalted butter, room temperature
- 1 cup whole milk, lukewarm
- 1 egg yolk
- 2 tablespoons baking soda
- 1 cup granulated sugar
- 3 tablespoons ground cinnamon
- 6 tablespoons unsalted butter, melted
- ½ cup cream cheese, room temperature
- 2 tablespoons unsalted butter, room temperature (for cream cheese dip)
- 1 cup confectioners’ sugar
- 1 tablespoon heavy cream
- ½ teaspoon vanilla bean paste
Instructions
- In a medium bowl, combine the lukewarm milk, 1 tablespoon of sugar, and yeast. Allow this mixture to sit for 10-15 minutes until foamy.
- In the bowl of a stand mixer, mix the flour, remaining sugar, kosher salt, and butter. Pour in the foamy milk mixture along with the lukewarm water. Mix until combined.
- Knead the dough on low speed until soft and slightly sticky, approximately 5 minutes, then shape into a ball.
- Place the dough in a lightly oiled bowl, cover, and let it rise in a warm area for about 1 hour or until doubled in size.
- Once risen, divide the dough into 12 portions. Roll each into a 20-inch rope and twist into a pretzel shape. Allow to rise for another 20-30 minutes.
- Preheat your oven to 375°F (190°C) and line baking trays with parchment paper.
- Bring water to a boil in a large pot, add baking soda. Boil each pretzel for 40 seconds on each side, then transfer to trays.
- Whisk the egg yolk with 1 tablespoon of water and brush over the pretzels.
- Bake for 12-14 minutes until golden brown, then cool for 5 minutes.
- Mix granulated sugar and cinnamon in a bowl. Brush warm pretzels with melted butter and coat with cinnamon sugar.
- To make the cream cheese dip, whip cream cheese and room temperature butter until smooth. Gradually add confectioners’ sugar, heavy cream, and vanilla bean paste.
Notes
Letting the dough rise in a warm environment helps it rise perfectly. Experiment with toppings for variety.
