Ingredients

- 2 cups fresh broccoli florets
- 1 large Honeycrisp apple, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup sunflower seeds
- 1/2 cup dried cranberries
- 1/2 cup Greek yogurt
- 2 tbsp honey
- 1 tbsp cider vinegar
Instructions
- Rinse and chop broccoli into bite-sized pieces.
- Core and slice the Honeycrisp apple into thin wedges.
- Thinly slice the red onion.
- In a large bowl, combine broccoli, sliced apple, red onion, sunflower seeds, and dried cranberries. Toss gently.
- In a separate bowl, whisk together Greek yogurt, honey, and cider vinegar until smooth.
- Pour the dressing over the salad mixture and toss to coat.
- Chill in the refrigerator for 30 minutes before serving.
Notes
For a vegan option, replace Greek yogurt with vegan yogurt or cashew cream.
