Description
A delightful slice of tropical bliss with a creamy filling and a zesty key lime flavor.
Ingredients
Scale
- 11 graham crackers
- 1/2 cup salted macadamia nuts
- 2 tablespoons granulated sugar
- 5 tablespoons unsalted butter, melted
- 28 ounces sweetened condensed milk
- 1 cup key lime juice
- 4 large egg yolks
- 1 teaspoon key lime zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, pulse graham crackers and macadamia nuts until they resemble fine crumbs. Stir in sugar and melted butter, mixing until the texture resembles wet sand.
- Press the crust mixture into a pie dish evenly across the bottom and up the sides. Bake the crust in the preheated oven for about 8 minutes until it takes on a golden hue.
- In a medium bowl, whisk together sweetened condensed milk, key lime juice, and egg yolks until smooth and creamy.
- Pour the filling into the warm crust, smoothing it to ensure evenness. Bake the pie for 18-20 minutes, until it’s slightly jiggly in the center.
- Cool completely, then refrigerate for at least 1 hour to allow the flavors to meld.
- Garnish with whipped cream, key lime zest, or macadamia nuts for presentation.
Notes
For a lighter version, use lower-sugar alternatives for sweetened condensed milk and consider a gluten-free crust.
