Description

A wholesome and comforting lasagna layered with sweet potatoes, ricotta, spinach, and marinara sauce.


Ingredients

  • 3 large sweet potatoes, sliced thinly
  • 2 cups ricotta cheese
  • 2 cups fresh spinach
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, spinach, garlic, salt, and pepper until well combined.
  3. In a baking dish, layer sweet potato slices, followed by the ricotta mixture, marinara sauce, and a sprinkle of mozzarella. Repeat until all ingredients are used.
  4. Finish with marinara sauce and mozzarella on top, then drizzle olive oil over the top.
  5. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
  6. Let it cool for a few minutes before slicing and serving.

Notes

Cut sweet potatoes uniformly for even cooking. You can sauté the spinach for extra flavor or add red pepper flakes for heat.
