A wholesome and comforting lasagna layered with sweet potatoes, ricotta, spinach, and marinara sauce.
Ingredients

- 3 large sweet potatoes, sliced thinly
- 2 cups ricotta cheese
- 2 cups fresh spinach
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine ricotta cheese, spinach, garlic, salt, and pepper until well combined.
- In a baking dish, layer sweet potato slices, followed by the ricotta mixture, marinara sauce, and a sprinkle of mozzarella. Repeat until all ingredients are used.
- Finish with marinara sauce and mozzarella on top, then drizzle olive oil over the top.
- Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
- Let it cool for a few minutes before slicing and serving.
Notes
Cut sweet potatoes uniformly for even cooking. You can sauté the spinach for extra flavor or add red pepper flakes for heat.
