Description

Ingredients

  • 1 cup unsalted butter, softened (225 g)
  • 1.5 cups granulated sugar (300 g)
  • 2 large eggs (room temperature)
  • 2 tbsp fresh lemon zest
  • 0.25 cup fresh lemon juice (60 ml)
  • 3 cups all-purpose flour (360 g)
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup extra granulated sugar (for rolling)

Instructions

  1. In a large mixing bowl, beat the softened butter with 1½ cups of granulated sugar until light and fluffy, about 3 minutes.
  2. Add the eggs one at a time, beating well after each addition, then stir in the lemon zest and lemon juice until combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add to the butter mixture on low speed until just combined.
  4. Cover the dough and chill in the refrigerator for 30 minutes.
  5. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll the chilled dough into 1-inch balls, roll in extra sugar, and place on prepared baking sheets.
  7. Bake for 8-10 minutes until edges are set but centers remain soft. Allow to cool on baking sheets for 5 minutes before transferring to a cooling rack.

Notes

For a lighter version, substitute granulated sugar with a low-sugar alternative and use coconut oil instead of butter for a dairy-free option. Store in an airtight container for up to a week or freeze for up to three months.
