Ingredients

  • 1 pound carrots, peeled and cut into sticks or rounds
  • 1 pound parsnips, peeled and cut similarly
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Fresh thyme (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots and parsnips. Cut into uniform sticks or rounds.
  3. In a large mixing bowl, toss the carrots and parsnips with olive oil, maple syrup, salt, and pepper.
  4. Spread the vegetables in a single layer on parchment-lined baking sheets.
  5. Roast in the oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
  6. Remove from the oven and sprinkle with fresh thyme before serving warm.

Notes

For consistent cuts, use a mandoline slicer. You can add chopped nuts during the last five minutes of roasting for extra texture.
