- 1 pound parsnips, peeled and cut similarly

Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the carrots and parsnips. Cut into uniform sticks or rounds.
- In a large mixing bowl, toss the carrots and parsnips with olive oil, maple syrup, salt, and pepper.
- Spread the vegetables in a single layer on parchment-lined baking sheets.
- Roast in the oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
- Remove from the oven and sprinkle with fresh thyme before serving warm.
Notes
For consistent cuts, use a mandoline slicer. You can add chopped nuts during the last five minutes of roasting for extra texture.
