Description

A beautifully swirled Marble Loaf Cake with rich flavors of vanilla and cocoa, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 large eggs, at room temperature
  • 1/4 cup full-fat sour cream, at room temperature
  • 1 tablespoon pure vanilla extract
  • 2/3 cup whole milk, divided, at room temperature
  • 3 tablespoons unsweetened cocoa powder

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a mixer, beat together the softened butter and granulated sugar until smooth and fluffy.
  4. Gradually add the vegetable oil, eggs, sour cream, and vanilla extract, mixing between each addition.
  5. Gradually add the dry mixture to the wet mixture, alternating with 2/3 cup of milk and mix until just combined.
  6. Take less than half of the batter and mix in the remaining milk, cocoa powder, and optional espresso powder until smooth.
  7. Dollop spoonfuls of vanilla and chocolate batter alternately into the prepared loaf pan. Use a knife or skewer to swirl together.
  8. Bake for 65-75 minutes or until a toothpick comes out clean.
  9. Let it cool for 30 minutes in the pan before removing.
  10. Melt semi-sweet chocolate and heavy cream over a double boiler, stirring until smooth and let thicken slightly for 20-30 minutes.
  11. Drizzle or spread the ganache over the cooled cake.
  12. Store at room temperature for up to 3 days or in the refrigerator for 1 week.

Notes

For an elegant touch, serve with fresh berries or whipped cream. Adjust cocoa for more chocolate flavor.
