- 2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/3 cup vegetable oil
- 2 large eggs, at room temperature
- 1/4 cup full-fat sour cream, at room temperature
- 1 tablespoon pure vanilla extract
- 2/3 cup whole milk, divided, at room temperature
- 3 tablespoons unsweetened cocoa powder
Instructions
- Preheat the oven to 350°F (177°C) and grease a 9×5 inch loaf pan.
- In a bowl, whisk together the flour, baking powder, and salt; set aside.
- In a mixer, beat together the softened butter and granulated sugar until smooth and fluffy.
- Gradually add the vegetable oil, eggs, sour cream, and vanilla extract, mixing between each addition.
- Gradually add the dry mixture to the wet mixture, alternating with 2/3 cup of milk and mix until just combined.
- Take less than half of the batter and mix in the remaining milk, cocoa powder, and optional espresso powder until smooth.
- Dollop spoonfuls of vanilla and chocolate batter alternately into the prepared loaf pan. Use a knife or skewer to swirl together.
- Bake for 65-75 minutes or until a toothpick comes out clean.
- Let it cool for 30 minutes in the pan before removing.
- Melt semi-sweet chocolate and heavy cream over a double boiler, stirring until smooth and let thicken slightly for 20-30 minutes.
- Drizzle or spread the ganache over the cooled cake.
- Store at room temperature for up to 3 days or in the refrigerator for 1 week.
Notes
For an elegant touch, serve with fresh berries or whipped cream. Adjust cocoa for more chocolate flavor.
