- 1/2 cup unsalted butter, softened to room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed light or dark brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 and 1/2 cups all-purpose flour, spooned and leveled
- 1/3 cup natural unsweetened cocoa powder
- 1/4 cup dry hot cocoa mix
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 2 teaspoons milk (any kind is fine)
- 10–11 large marshmallows, cut in half
- 8 ounces semi-sweet chocolate, finely chopped
Instructions
- In a large bowl, beat the softened butter and both sugars together until light and fluffy—this should take about 2-3 minutes.
- Add the egg and vanilla extract into the mixture and beat until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, hot cocoa mix, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture until fully combined.
- Beat in the milk until the cookie dough is creamy.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 2 hours.
- Preheat your oven to 350°F and line your baking sheets with parchment paper.
- Scoop tablespoon-sized portions of the chilled dough and place them on the baking sheet.
- Bake the cookies for 10 minutes. Press half a marshmallow into each cookie and return to the oven for another 2 minutes.
- Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack.
- Melt the chocolate and drizzle over the cooled cookies.
