Description

Indulge in the warmth and nostalgia of these dreamy cookies featuring a gooey marshmallow center and rich chocolate flavor.


Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups all-purpose flour, spooned and leveled
  • 1/3 cup natural unsweetened cocoa powder
  • 1/4 cup dry hot cocoa mix
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons milk (any kind is fine)
  • 1011 large marshmallows, cut in half
  • 8 ounces semi-sweet chocolate, finely chopped

Instructions

  1. In a large bowl, beat the softened butter and both sugars together until light and fluffy—this should take about 2-3 minutes.
  2. Add the egg and vanilla extract into the mixture and beat until well combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, hot cocoa mix, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture until fully combined.
  5. Beat in the milk until the cookie dough is creamy.
  6. Cover the dough with plastic wrap and chill in the refrigerator for at least 2 hours.
  7. Preheat your oven to 350°F and line your baking sheets with parchment paper.
  8. Scoop tablespoon-sized portions of the chilled dough and place them on the baking sheet.
  9. Bake the cookies for 10 minutes. Press half a marshmallow into each cookie and return to the oven for another 2 minutes.
  10. Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack.
  11. Melt the chocolate and drizzle over the cooled cookies.
