- 1 sheet of puff pastry, thawed
- 1 (8 oz) package cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 can (15 oz) peach slices, drained and patted dry
- 1 egg, beaten
- 1 tablespoon milk
- 1 tablespoon powdered sugar, for dusting (optional)
- Fresh mint leaves, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry to smooth out any creases.
- Cut the pastry into 4-inch squares.
- In a medium bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Place a tablespoon of the cream cheese mixture in the center of each puff pastry square.
- Top each cream cheese dollop with a few peach slices.
- Fold the edges of the pastry squares to form a border around the peaches and cream cheese, pinching the corners to secure them.
- In a small bowl, whisk together the beaten egg and milk. Brush the edges of each tart with the egg wash.
- Place the tarts on the prepared baking sheet and bake for 15-18 minutes, or until the pastry is golden and puffy.
- Remove the tarts from the oven and let them cool slightly. Dust with powdered sugar and garnish with fresh mint leaves before serving.
