Description

An easy no-knead focaccia topped with vibrant pesto, delivering a crispy crust and soft, airy interior.


Ingredients

Scale
  • 2 2/3 cups bread flour
  • 2 2/3 cups all-purpose flour
  • 1/2 tablespoon kosher salt
  • 2 1/2 teaspoons instant yeast
  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil plus more for coating
  • 2 1/2 cups lukewarm water
  • 1/2 cup pesto
  • Flaky sea salt

Instructions

  1. In a very large bowl, mix together the bread flour, all-purpose flour, salt, and yeast.
  2. Combine the honey, olive oil, and water, then pour this mixture into the dry ingredients.
  3. Use a dough whisk or wooden spoon to mix everything until no dry bits remain.
  4. Cover the bowl with a dish towel and let the dough hydrate for 5 minutes.
  5. Wet your hands, go halfway under the dough, and gently lift and fold it over itself.
  6. Rotate the bowl a quarter turn and repeat the gentle folding, covering it again to rest for another 5 minutes.
  7. Repeat the folding and resting process two more times.
  8. Drizzle olive oil over the dough and turn it to coat fully.
  9. Cover with plastic wrap and chill in the refrigerator for at least 12 hours or up to 3 days.
  10. Generously oil a 9×13-inch metal pan and gently turn the dough into it.
  11. Carefully fold the edges of the dough under to create a sharp rectangle.
  12. Gently coax the dough to spread out to the edges of the pan and drizzle again with olive oil.
  13. Place the pan in a warm spot and let the dough rise for 2-3 hours.
  14. Preheat your oven to 450°F.
  15. Dollop pesto over the dough, pressing down slightly.
  16. Sprinkle generously with flaky sea salt.
  17. Bake for 25-30 minutes until golden brown.
  18. Let cool on a wire rack, slice, and enjoy!

Notes

To keep focaccia fresh, slice and wrap tightly before freezing. Reheat at 350°F for 10 minutes.
