Description

A comforting one-pan dish featuring tender chicken meatballs simmered in savory tomatoes and served with orzo pasta.


Ingredients

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 cup orzo pasta
  • Fresh basil for garnish

Instructions

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined and form into golf ball-sized meatballs.
  2. In a large skillet, heat olive oil over medium heat and sear meatballs for 8-10 minutes until golden brown.
  3. Add diced tomatoes and chicken broth to the skillet, stirring gently and bring to a simmer.
  4. Stir in the orzo pasta and cover the skillet, cooking for 12-15 minutes until orzo is tender.
  5. Remove from heat and garnish with fresh basil before serving.

Notes

Use high-quality chicken broth for more flavor. Feel free to add seasonal vegetables for extra nutrition.
