- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 can (14 ounces) diced tomatoes
- 1 cup chicken broth
- 1 cup orzo pasta
- Fresh basil for garnish
Instructions
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined and form into golf ball-sized meatballs.
- In a large skillet, heat olive oil over medium heat and sear meatballs for 8-10 minutes until golden brown.
- Add diced tomatoes and chicken broth to the skillet, stirring gently and bring to a simmer.
- Stir in the orzo pasta and cover the skillet, cooking for 12-15 minutes until orzo is tender.
- Remove from heat and garnish with fresh basil before serving.
Notes
Use high-quality chicken broth for more flavor. Feel free to add seasonal vegetables for extra nutrition.
