- 2 tablespoons cold water
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup butter, melted
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- Combine the graham cracker crumbs and sugar in a medium bowl. Stir in the melted butter until fully combined. Press the mixture into the bottom of the springform pan. Bake for 10 minutes and set aside to cool.
- Beat the cream cheese in a mixing bowl until smooth. Gradually add the sugar and vanilla, continuing to beat until creamy. Add the eggs one at a time, mixing well after each addition. Blend in sour cream and flour until just combined.
- Pour the cheesecake mixture over the cooled crust and spread evenly.
- In a medium saucepan, combine sliced peaches, brown sugar, cinnamon, and lemon juice over medium heat. Cook until peaches are tender, about 5-7 minutes.
- In a small bowl, mix the cornstarch with cold water. Stir into the peach mixture, cooking until thickened, about 1-2 minutes. Remove from heat and cool slightly.
- Spoon the peach mixture over the cheesecake layer, distributing evenly.
- Mix flour, sugar, salt, baking powder, and melted butter to create a crumble. Sprinkle over the peach layer.
- Bake for 50-60 minutes or until the center is set. Let it cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
For enhanced flavor, consider adding almond extract or mixing in nuts for crunch.
