Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 24 soft caramel candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. Cream together the softened butter, creamy peanut butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
  4. Mix in the egg and vanilla extract until smooth.
  5. Gradually stir in all-purpose flour, baking soda, and salt until just combined.
  6. Fold in the semi-sweet chocolate chips.
  7. Take a spoonful of dough, flatten it, place a caramel candy in the center, and wrap the dough around it to seal.
  8. Place dough balls on the prepared sheets, spacing them 2 inches apart, and bake for 10-12 minutes until edges are golden.
  9. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, add a pinch of peanut butter powder. Refrigerating dough for 30 minutes before baking yields chewier cookies.
