Description
A deliciously cheesy bread filled with pepperoni, perfect for family gatherings or movie nights.
Ingredients

- 3/4 cup warm water (110°F/43°C)
- 1 teaspoon granulated sugar
- 1 teaspoon instant yeast
- 1 tablespoon olive oil
- 2 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 8 ounces sandwich pepperoni, sliced
- 16 ounces mozzarella cheese, shredded
- 1/4 cup parmesan cheese, shredded or grated
- 2 tablespoons salted butter, melted
- 1 clove garlic, finely minced
- 1 tablespoon chopped fresh parsley
- Marinara sauce for dipping
Instructions
- In a stand mixer fitted with a dough hook attachment, mix together the warm water, sugar, yeast, olive oil, 1 3/4 cups flour, and kosher salt.
- Start on low until combined, then increase to medium-high and knead for about 3 minutes.
- Scrape the bowl’s sides and add the remaining 1/4 cup flour. Mix on low until incorporated; switch to medium speed for another minute until the dough pulls away from the sides.
- Grease a large mixing bowl with olive oil and transfer your dough. Turn it to coat all surfaces.
- Cover it with plastic wrap or a dish towel, and let it rise in a warm place until doubled in size, roughly an hour.
- Once risen, preheat your oven to 375°F/190°C. Line a large baking sheet with parchment paper.
- Turn the dough out onto a lightly floured surface and roll into a rectangle measuring 12×16 inches.
- Layer the pepperoni evenly across the dough, and sprinkle with the mozzarella and parmesan cheese.
- Starting from one long end, tightly roll the dough into a log, seam-side down, and tuck edges under to seal.
- Place the pepperoni bread on the baking sheet and cut 4-5 vents on the top for steam to escape.
- Bake for 25 minutes on the center rack.
- In the last minutes of baking, mix the melted butter, garlic, and parsley; then spread over the top of the bread.
- Continue baking for an additional 10 minutes, then transfer to a wire rack to cool for about 5 minutes.
- Finish with a sprinkle of parmesan and parsley, slice into 1-inch thick servings, and serve warm with marinara sauce for dipping.
Notes
For a spicy kick, add jalapeños or banana peppers. Leftovers can be frozen and reheated easily.
