- 1 cup crushed pineapple, drained

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the brown sugar, granulated sugar, and butter until light and fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt, then gradually mix into the wet ingredients.
- Fold in the crushed pineapple.
- Drop spoonfuls of dough onto the prepared baking sheet and top each with a maraschino cherry.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
