Instructions

  1. Prepare the Pistachio Cream: Line a baking sheet with parchment paper, scoop 1/2-teaspoon portions of pistachio cream onto the tray, and freeze for 20 to 30 minutes until solid.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking soda, and salt until evenly blended.
  3. Cream the Butter and Sugars: Beat together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add Egg and Vanilla: Mix in the egg and vanilla extract until fully combined.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Fold in Mix-ins: Gently fold in the chopped pistachios and dark chocolate chunks.
  7. Shape the Cookies: Scoop out 2-tablespoon portions of dough, flatten them, place a pistachio cream center in the middle, and wrap the dough around to enclose it.
  8. Chill the Dough: Refrigerate the dough balls for 1 hour or freeze for 20 minutes.
