Instructions
- Prepare the Pistachio Cream: Line a baking sheet with parchment paper, scoop 1/2-teaspoon portions of pistachio cream onto the tray, and freeze for 20 to 30 minutes until solid.
- Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking soda, and salt until evenly blended.
- Cream the Butter and Sugars: Beat together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add Egg and Vanilla: Mix in the egg and vanilla extract until fully combined.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Fold in Mix-ins: Gently fold in the chopped pistachios and dark chocolate chunks.
- Shape the Cookies: Scoop out 2-tablespoon portions of dough, flatten them, place a pistachio cream center in the middle, and wrap the dough around to enclose it.
- Chill the Dough: Refrigerate the dough balls for 1 hour or freeze for 20 minutes.
- Preheat and Bake: Preheat oven to 350°F (175°C), arrange dough balls on a baking sheet, and bake for 10 to 12 minutes until edges are golden.
- Cooling Time: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
