Description

A luxurious Italian dessert combining rich mascarpone cheese with the vibrant flavor of pistachios and deep espresso.


Ingredients

  • 1 cup pistachio paste
  • 1 1/2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups strong espresso or coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 1 package ladyfinger biscuits (about 24 to 30 pieces)
  • 1/4 cup crushed pistachios
  • White chocolate shavings (optional)
  • Unsweetened cocoa powder (optional)

Instructions

  1. Combine the cooled espresso and optional coffee liqueur in a shallow dish and set aside.
  2. In a large mixing bowl, whisk together the mascarpone cheese and pistachio paste until smooth.
  3. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  4. Gently fold the whipped cream mixture into the mascarpone and pistachio blend until fully combined.
  5. Dip each ladyfinger into the coffee mixture for 1 to 2 seconds on each side and arrange a layer in an 8×8 inch dish.
  6. Spread half of the pistachio mascarpone cream over the ladyfinger layer.
  7. Add a second layer of dipped ladyfingers, followed by the remaining pistachio cream on top.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Before serving, garnish with crushed pistachios, white chocolate shavings, and cocoa powder if desired.

Notes

Let mascarpone cheese come to room temperature for smooth mixing. Don’t skip the resting time for flavor development.
