- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup finely chopped pistachios
- 1/4 teaspoon salt
- 1/4 teaspoon almond extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy, about 3-4 minutes.
- Mix in the vanilla extract and optional almond extract until well incorporated.
- In a separate bowl, whisk together the flour and salt, then gradually add to the butter mixture until just incorporated.
- Fold in the finely chopped pistachios until evenly distributed.
- Form small balls of dough (about 1 inch in diameter) and place them on the prepared baking sheet, spaced apart.
- Bake for 12-15 minutes, until the bottoms are lightly golden and the tops feel firm.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar before serving.
Notes
For deeper flavor, consider toasting the pistachios beforehand. You can also add orange zest or substitute half the butter with coconut oil for variation.
