Description

A moist and flavorful pumpkin bread topped with rich cream cheese frosting, perfect for any autumn occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cardamom
  • 1/2 tsp salt
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup canola oil
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 8 oz cream cheese
  • 4 oz unsalted butter
  • 2 cups powdered sugar
  • 23 tbsp milk

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix together the flour, baking soda, spices, and salt.
  3. In another bowl, whisk together the canola oil, granulated sugar, brown sugar, pumpkin puree, eggs, and vanilla until smooth.
  4. Gently fold the dry ingredients into the wet mixture.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 55-65 minutes until a toothpick comes out clean.
  7. Cool the bread for 10 minutes in the pan, then transfer to a wire rack.
  8. For the frosting, beat cream cheese and unsalted butter until smooth, then add powdered sugar and enough milk for desired consistency.
  9. Once cooled, frost the bread and enjoy!

Store leftovers in an airtight container for up to 3-4 days or freeze individual slices for up to 3 months.
