- 1 loaf (16 ounces) Challah bread
- 2 cups (490 g) whole milk
- 4 large eggs
- 1/2 cup (122 g) pure pumpkin
- 1/2 cup (100 g) light brown sugar, packed
- 1 tablespoon pumpkin pie spice
- 1/2 cup (54 g) pecans, roughly chopped
- Maple syrup (optional)
Instructions
- Lightly spray a 10-inch oval baking dish with nonstick cooking spray and set aside.
- In a large bowl, whisk together the milk, eggs, pumpkin, brown sugar, and pumpkin pie spice until fully combined.
- Dip each slice of Challah bread into the custard mixture, allowing it to soak for just a few moments.
- Layer the soaked slices upright into the prepared baking dish.
- Pour any remaining custard over the bread slices.
- Cover with aluminum foil and refrigerate for at least an hour or overnight.
- Preheat your oven to 350°F.
- Top with pecans and bake covered for 30 minutes, then remove the foil and bake for another 20-25 minutes until golden brown.
- Serve warm, drizzled with maple syrup.
