  • 2 cups (490 g) whole milk
  • 4 large eggs
  • 1/2 cup (122 g) pure pumpkin
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 tablespoon pumpkin pie spice
  • 1/2 cup (54 g) pecans, roughly chopped
  • Maple syrup (optional)

Instructions

  1. Lightly spray a 10-inch oval baking dish with nonstick cooking spray and set aside.
  2. In a large bowl, whisk together the milk, eggs, pumpkin, brown sugar, and pumpkin pie spice until fully combined.
  3. Dip each slice of Challah bread into the custard mixture, allowing it to soak for just a few moments.
  4. Layer the soaked slices upright into the prepared baking dish.
  5. Pour any remaining custard over the bread slices.
  6. Cover with aluminum foil and refrigerate for at least an hour or overnight.
  7. Preheat your oven to 350°F.
  8. Top with pecans and bake covered for 30 minutes, then remove the foil and bake for another 20-25 minutes until golden brown.
