Description
A comforting and indulgent dish featuring succulent chicken in a creamy sauce over fettuccine pasta, enhanced with sun-dried tomatoes and Parmesan.

- 1 lb (450g) boneless skinless chicken breasts
- Salt and freshly ground black pepper to taste
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped (in oil, drained)
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp red pepper flakes (optional, for heat)
- 8 oz (225g) fettuccine pasta
- Fresh basil leaves, chopped, for garnish
Instructions
- Cook the fettuccine pasta in a large pot of salted water until al dente according to package instructions.
- Reserve 1/2 cup of the pasta water, then drain the rest and set the pasta aside.
- Season the chicken breasts generously with salt and pepper.
- In a large skillet over medium-high heat, add olive oil and cook the chicken until golden brown, about 4-5 minutes per side. Remove and set aside.
- Reduce the heat to medium, add butter to the same skillet until melted.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine and bringing to a simmer.
- Add sun-dried tomatoes, Parmesan cheese, oregano, thyme, and red pepper flakes, stirring until the cheese melts.
- Return the chicken to the skillet and let it simmer for another 2-3 minutes to blend the flavors.
- Serve over the cooked fettuccine pasta, adjusting sauce consistency with reserved pasta water if necessary.
- Garnish with freshly chopped basil leaves and serve hot.
Notes
For a lighter version, substitute heavy cream with coconut cream or use whole wheat pasta for added fiber.
