Description

A comforting and indulgent dish featuring succulent chicken in a creamy sauce over fettuccine pasta, enhanced with sun-dried tomatoes and Parmesan.


Ingredients

  • 1 lb (450g) boneless skinless chicken breasts
  • Salt and freshly ground black pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped (in oil, drained)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp red pepper flakes (optional, for heat)
  • 8 oz (225g) fettuccine pasta
  • Fresh basil leaves, chopped, for garnish

Instructions

  1. Cook the fettuccine pasta in a large pot of salted water until al dente according to package instructions.
  2. Reserve 1/2 cup of the pasta water, then drain the rest and set the pasta aside.
  3. Season the chicken breasts generously with salt and pepper.
  4. In a large skillet over medium-high heat, add olive oil and cook the chicken until golden brown, about 4-5 minutes per side. Remove and set aside.
  5. Reduce the heat to medium, add butter to the same skillet until melted.
  6. Add minced garlic and sauté for 1 minute until fragrant.
  7. Pour in heavy cream and chicken broth, stirring to combine and bringing to a simmer.
  8. Add sun-dried tomatoes, Parmesan cheese, oregano, thyme, and red pepper flakes, stirring until the cheese melts.
  9. Return the chicken to the skillet and let it simmer for another 2-3 minutes to blend the flavors.
  10. Serve over the cooked fettuccine pasta, adjusting sauce consistency with reserved pasta water if necessary.
  11. Garnish with freshly chopped basil leaves and serve hot.

Notes

For a lighter version, substitute heavy cream with coconut cream or use whole wheat pasta for added fiber.
