  • 8 Juicy Pineapple Rings
  • 1 Cup Dark Molasses Mixed with Apple Juice
  • 1 Cup Coconut Molasses Combined with Apple Juice
  • 1 ½ Cups All-Purpose Flour
  • 10 Oz Sweetened Coconut Flakes
  • 2 Large Eggs
  • ½ Cup Coconut Milk
  • Vegetable Oil for Frying
  • 4 Oz Cream Cheese, Softened
  • ½ Cup Powdered Sugar

Instructions

  1. Begin by placing the pineapple rings in a large mixing bowl. Pour the dark molasses mixed with apple juice and the coconut molasses combined with apple juice over the rings. Allow them to marinate for about one hour. Drain and pat dry.
  2. Take three bowls: in one, add all-purpose flour; in the second, place sweetened coconut flakes; in the third, whisk together the eggs and coconut milk until smooth.
  3. Dip each marinated pineapple ring into the flour, then into the egg mixture, allowing excess to drip off, and roll it in the coconut flakes.
  4. Heat vegetable oil in a frying pan to 350°F (175°C) and fry the pineapple rings for approximately one minute on each side until golden brown. Transfer to paper towels to drain excess oil.
  5. In a mixing bowl, combine the softened cream cheese with powdered sugar. Gradually add the reserved molasses and apple juice mixture until reaching desired consistency.
