- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large onion, thinly sliced
- 2 bell peppers (any color), thinly sliced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 tablespoon fresh lime juice
- 8 flour tortillas
Instructions
- Place the chicken breasts in a slow cooker.
- In a small bowl, combine olive oil, smoked paprika, cumin, garlic powder, onion powder, chili powder, salt, and black pepper.
- Rub the spice mixture all over the chicken breasts.
- Layer the sliced onions and bell peppers on top of the chicken in the slow cooker.
- Pour the undrained diced tomatoes over the chicken, onions, and peppers.
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fork-tender.
- Remove the chicken from the slow cooker and shred it with two forks.
- Return the shredded chicken to the mix and stir in the fresh lime juice.
- Warm the flour tortillas before serving.
- Serve the smoky chicken and vegetables in the warm tortillas.
