- 4 chicken thighs (bone-in and skinless)
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons vegetable oil
- 3 tablespoons tandoori masala spice mix
- 1 inch ginger root, finely grated
- 3 cloves garlic, minced
- 1 tablespoon cayenne pepper (adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt, to taste
- Fresh cilantro leaves, for garnish
- Lemon wedges, for serving
Instructions
- In a mixing bowl, combine the yogurt, lemon juice, vegetable oil, tandoori masala, ginger, garlic, cayenne pepper, turmeric, cumin, coriander, garam masala, and salt to make the marinade.
- Make shallow cuts on the chicken thighs.
- Rub the marinade all over the chicken, ensuring it’s well coated. Refrigerate for at least 2 hours or overnight.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Place the marinated chicken thighs on the grill and cook for about 6–8 minutes on each side until fully cooked.
- Remove from the grill and let rest for a few minutes before serving.
- Garnish with fresh cilantro and serve with lemon wedges.

Marinate overnight for the best flavor. Adjust cayenne pepper for desired spice level.
