Ingredients

  • 2 cups fresh baby spinach, packed and finely chopped
  • 3 ounces feta cheese, crumbled
  • 1/4 cup breadcrumbs
  • 2 teaspoons minced garlic
  • 1/2 tablespoon lemon zest
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon black pepper
  • 1 pound ground chicken
  • 2 teaspoons olive oil for cooking
  • 6 tablespoons mayonnaise
  • 1 teaspoon chopped fresh dill
  • 1/2 lemon, juiced
  • Salt and pepper to taste
  • 4 hamburger buns
  • Pea shoots or fresh spinach and tomato slices for serving

Instructions

  1. In a mixing bowl, combine spinach, feta, breadcrumbs, garlic, lemon zest, onion powder, salt, and pepper.
  2. Add the ground chicken and mix gently until just combined.
  3. Shape the mixture into 4 patties.
  4. Heat olive oil in a skillet over medium heat and cook the patties for 4-5 minutes on one side.
  5. Flip the burgers, cover, and cook for another 4-5 minutes until the internal temperature reaches 165°F.
  6. Mix mayonnaise, lemon juice, and dill in a small bowl, seasoned with salt and pepper.
  7. Assemble the burgers on toasted buns with pea shoots or spinach, tomato slices, and drizzle with lemon dill mayo.

Notes

For a healthier twist, substitute whole-grain buns or lettuce wraps, and consider using Greek yogurt instead of mayonnaise.
