A comforting and flavorful sticky sweet potato casserole topped with crunchy pecans and optional mini marshmallows.

- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup maple syrup
- 1/4 cup butter, melted
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup chopped pecans
- 1/2 cup mini marshmallows (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the sweet potatoes in salted water until tender, about 15-20 minutes. Drain them thoroughly and mash until smooth.
- In a large mixing bowl, combine the mashed sweet potatoes, maple syrup, melted butter, brown sugar, vanilla extract, cinnamon, and nutmeg. Mix until well combined.
- Pour the sweet potato mixture into a greased casserole dish, spreading it evenly.
- In a separate bowl, combine chopped pecans with a bit of brown sugar. Sprinkle generously over the sweet potato layer. Optionally, add mini marshmallows on top.
- Bake the casserole for 25-30 minutes, or until heated through and the marshmallows are golden brown.
- Serve warm and enjoy!
Notes
To enhance flavor, consider roasting sweet potatoes instead of boiling. Can be made ahead of time and stored in the fridge.
