Description

A comforting and flavorful sticky sweet potato casserole topped with crunchy pecans and optional mini marshmallows.


Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup maple syrup
  • 1/4 cup butter, melted
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup chopped pecans
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sweet potatoes in salted water until tender, about 15-20 minutes. Drain them thoroughly and mash until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes, maple syrup, melted butter, brown sugar, vanilla extract, cinnamon, and nutmeg. Mix until well combined.
  4. Pour the sweet potato mixture into a greased casserole dish, spreading it evenly.
  5. In a separate bowl, combine chopped pecans with a bit of brown sugar. Sprinkle generously over the sweet potato layer. Optionally, add mini marshmallows on top.
  6. Bake the casserole for 25-30 minutes, or until heated through and the marshmallows are golden brown.
  7. Serve warm and enjoy!

Notes

To enhance flavor, consider roasting sweet potatoes instead of boiling. Can be made ahead of time and stored in the fridge.
