- 1 pack Strawberry Gelatin Mix
- 2 Room Temperature Eggs
- 1 cup Granulated Sugar
- 2 cups All-Purpose Flour
- 1 tsp Pure Vanilla Extract
- 1/4 cup Vegetable Oil
Instructions
- Prepare the Strawberries: Toss diced strawberries with granulated sugar and allow them to sit for 15-20 minutes. Dust with flour before adding to batter.
- Cream the Cheese: Beat softened cream cheese until smooth, then mix in sugar and eggs one at a time. Add strawberry juice and vanilla extract.
- Mix Dry Ingredients: Combine flour and remaining dry ingredients in a separate bowl. Fold into the cream cheese mixture along with buttermilk and vegetable oil.
- Bake It: Pour batter into a loaf pan and bake in a preheated oven for about 35 minutes until golden brown.
- Cool and Glaze: Let the bread cool in the pan for 10 minutes, then invert onto a wire rack and cool completely before glazing.
