Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 1 cup vegetable oil (or melted coconut oil)
  • 4 large eggs
  • 2 cups all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • For the swirl:
    • 1/2 cup granulated sugar
    • 1 tablespoon ground cinnamon
  • Optional toppings:
    • Powdered sugar for dusting
    • Chopped pecans or walnuts

Instructions

  1. Prepare the Sweet Potatoes: Peel and boil the sweet potatoes in water until tender, then mash until smooth.
  2. Mix Wet Ingredients: In a mixing bowl, combine mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil. Mix well, adding eggs one at a time.
  3. Combine Dry Ingredients: In another bowl, whisk together flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
  4. Combine Wet and Dry: Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  5. Prepare the Swirl Mixture: Mix granulated sugar and ground cinnamon in a small bowl.
  6. Layer the Batter: Pour half the batter into a greased 9×13-inch baking pan. Sprinkle half the swirl mixture on top, add remaining batter, then top with remaining swirl and swirl gently with a knife.
  7. Bake the Cake: Bake in a preheated oven at 350°F (175°C) for 50-55 minutes or until a toothpick comes out clean.
  8. Cool and Serve: Allow the cake to cool slightly before serving. Dust with powdered sugar or sprinkle with chopped nuts if desired.
