- 1 pound ground turkey
- 1/2 cup Italian breadcrumbs or blanched almond flour
- 3/4 cup yellow onion, chopped
- 1 large egg
- 2 teaspoons garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 cups cooked brown rice or couscous
- 1 cup chopped cucumbers
- 1/2 cup Kalamata olives
- 1/2 cup tzatziki sauce
- Fresh dill for garnish
- Lemon wedges or slices
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground turkey, breadcrumbs, onion, egg, garlic, salt, and pepper. Mix gently.
- Form into 16 equal 2-inch meatballs.
- Arrange on a parchment-lined baking tray and bake for 15 minutes.
- Broil for the last 2-3 minutes for a golden finish.
- Layer rice as a base in serving bowls, then top with meatballs, cucumbers, olives, and tzatziki.
- Garnish with fresh dill and a squeeze of lemon juice.
- Serve and enjoy!
