Ingredients

  • 1 pound ground turkey
  • 1/2 cup Italian breadcrumbs or blanched almond flour
  • 3/4 cup yellow onion, chopped
  • 1 large egg
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked brown rice or couscous
  • 1 cup chopped cucumbers
  • 1/2 cup Kalamata olives
  • 1/2 cup tzatziki sauce
  • Fresh dill for garnish
  • Lemon wedges or slices

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, onion, egg, garlic, salt, and pepper. Mix gently.
  3. Form into 16 equal 2-inch meatballs.
  4. Arrange on a parchment-lined baking tray and bake for 15 minutes.
  5. Broil for the last 2-3 minutes for a golden finish.
  6. Layer rice as a base in serving bowls, then top with meatballs, cucumbers, olives, and tzatziki.
  7. Garnish with fresh dill and a squeeze of lemon juice.
