- 3 cups unsweetened almond milk
- 1/2 cup raw cashews (soaked)
- 4 medjool dates (pitted)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 pinch sea salt
- Ice cubes (for serving)
- Optional: 1–2 oz bourbon or rum per serving
Instructions
- Soak the raw cashews in hot water for 20–30 minutes or overnight in cold water. Drain and rinse before using.
- In a high-speed blender, combine the almond milk, soaked cashews, medjool dates, vanilla extract, ground nutmeg, ground cinnamon, and sea salt. Blend until well incorporated.
- Blend on high speed for 1–2 minutes until the mixture is smooth and creamy.
- Taste and adjust sweetness or spices as needed.
- Transfer the mixture to a pitcher and chill in the refrigerator for at least 1 hour.
- Pour the chilled eggnog over ice and garnish with nutmeg and a cinnamon stick.
- Optional: Stir in bourbon or rum just before serving.
Notes
Soak cashews overnight to save time. Experiment with additional spices or sweeteners for variations.
