Description

A delightful and creamy vegan beverage that captures the essence of cozy holiday gatherings with rich flavors of vanilla, nutmeg, and cinnamon.


Ingredients

  • 3 cups unsweetened almond milk
  • 1/2 cup raw cashews (soaked)
  • 4 medjool dates (pitted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 pinch sea salt
  • Ice cubes (for serving)
  • Optional: 1–2 oz bourbon or rum per serving

Instructions

  1. Soak the raw cashews in hot water for 20–30 minutes or overnight in cold water. Drain and rinse before using.
  2. In a high-speed blender, combine the almond milk, soaked cashews, medjool dates, vanilla extract, ground nutmeg, ground cinnamon, and sea salt. Blend until well incorporated.
  3. Blend on high speed for 1–2 minutes until the mixture is smooth and creamy.
  4. Taste and adjust sweetness or spices as needed.
  5. Transfer the mixture to a pitcher and chill in the refrigerator for at least 1 hour.
  6. Pour the chilled eggnog over ice and garnish with nutmeg and a cinnamon stick.
  7. Optional: Stir in bourbon or rum just before serving.

Notes
