- 4 large zucchinis
- 2 cups fresh spinach
- 1 cup ricotta cheese (or vegan alternative)
- 1 cup marinara sauce
- 1/2 cup nutritional yeast
- 2 cloves garlic, minced
- Salt and pepper to taste

- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- Sauté garlic in a pan with olive oil until fragrant.
- Add spinach and cook until wilted.
- Mix the cooked spinach with ricotta, nutritional yeast, salt, and pepper.
- Lay zucchini strips on a clean surface and spoon the spinach filling at one end.
- Spread some marinara sauce at the bottom of a baking dish.
- Place the rollatini seam-side down in the dish.
- Top the rollatini with remaining marinara sauce, drizzle with olive oil, and cover with foil.
- Bake for 25-30 minutes until heated through.
- Remove from oven, let cool slightly, garnish with fresh basil, and serve.
